1. Maracaturra Natural from @lajoyacoffeemx
Fruit forward with pineapple, cranberry and an integrated acidity, hints of banana and spice. What really sets this coffee apart is a silky, creamy body. The moment we tried this combination we knew this would be our inaugural »espresso-first« release and roasted it to showcase this balance.
The process: Natural Jade by La Joya
It begins with a careful selection of the coffee fruit, which is exposed to a fermentation-oxidation process between 100 and 120 hours in sealed bags. This allows the diversity of microorganisms characteristic of the Finca La Joya terroir to develop and potentiate the characteristics of each variety processed.
