In the Mecacalco region of Veracruz, at 950 m.a.s.l., Isabel Hernández and Victor Manuel Carlos break paradigms, showing what dedication, expert craftsmanship, and meticulous processing can achieve.
While fruit-forward coffees are traditionally linked to higher altitudes, Finca Las Ranas defies expectations. Know for their honey processes, their coffees are characterized by sweetness, vibrant fruit and berry notes.
They specialize in Marsellesa and their coffee is harvested by women from the local community.
This purple-honey was meticulously fermented for 350 hours in-cherry, and 72 hours after removing the skin, constantly measuring PH and sugar content. It was then briefly dried in the sun, and then move to shade.
