Thailand, Chaptalization Natural
We are incredibly proud to present this coffee to you. It belongs to the same batch Nathagrid "Yos" selected for his 2025 Cup of Excellence Thailand entry. Boasting delightful juiciness and acidity with a white wine finish... will make you want to slow down to appreciate all it's layers.
We met Yos in 2023 while traveling in Thailand. After being blown away by his coffees and seeing his passion for excellence and community firsthand, we knew we had to embark on a journey to share his coffee with you.
This is a very aromatic, clean fruit-explosion at first sip, light roast. Enjoy.
More on the process...
After coffee cherries are handpicked, they are fermented with a yeast cultured in the farm, glucose is added during this stage to fuel yeast activity. The process originates in wine making and is known as chaptalization. Cherries are then dried in the sun until humidity is 20%, slowly dried in the shade until 12%, dehulled and manually inspected.
